Ingredients:
- 1 Package of GF Penne Pasta (I used Jovial Brand)
- 32 oz of Marinara Sauce
- 3 Cups of Shredded Mozza
- 1/3 Cup of grated Parmesan Cheese
- 2 Small Boneless Chicken Breasts
- 3/4 Cup Gluten Free Flour (I used Bobs Redmill 1 to 1)
- 2 Teaspoons Seasoning Salt
- 1/4 Teaspoon of Pepper
- 2 Teaspoon of Italian Seasoning
- 2 Eggs
- 1 1/2 Cup of GF Breadcrumbs (I used Paneriso)
- 3/4 Cup Vegetable Oil
- 2 Tablespoons of Butter
- Fresh Parsley for Garnish
Directions:
- Preheat oven to 375 Degrees F
- Boil water and cook the pasta 1 mintute before it would be al dente.
- Drain and toss the pasta in the marinara sauce. Add only 1 Cup of the Mozza and 2 Tablespoons of Parmesan to the mixture.
- Cut the chicken into cubes aproximately 1 inch thick
- Prepare 3 bowls for breading. One bowl should have whisked eggs. One bowl should have
the breadcrumbs.One bowl should have the GF flour mixed with the 3 seasonings listed above. - First coat the chicken in flour mixture, then into the eggs and lastly into the breadcrumbs. (Make sure that your chicken is fully coated)
- Put oil in a pan with the butter and put it onto a medium heat.
- Once the oil is heated cook the chicken about four minutes per side to make the chicken nice and crispy. (You may have to cook the chicken into batches and may need to add more oil as the chicken cooks)
- Use papertowel on a plate to absorb the excess oil.
- Now assemble the meal into a 9 x 13 inch casserole dish. Layer the ingredients by starting off with a base of the pasta/sauce mixture. Then add some chicken and 1 cup of Mozzarella and 2 Tablespoons of Parmesan cheese. Repeat this again with pasta/sauce mixture then the chicken, Mozzarella and Parmesan.
- Bake the dish uncovered for 25 Minutes. If you want a cripsy top increase the heat to 475 and bake for 5 mintutes longer.
- Garnish you meal and serve!
Substituions:
- You can use GF chicken strips to make this meal in faster time! Ive used the Flamingo Brand before and it turned out great! (Leave them out for a few mintutes and cut them into smaller pieces before adding to the casserole)
- Another option to making this casserole a bit faster is to add rotisserie chicken instead of breading and frying your own!
Notes:
- Can bread the chicken while waiting for the water to boil and pasta to cook.
Storing:
- Leftovers last 3 days in the fridge
- This meal freezes well. You may want to add more marinara sauce when reheating to keep the moisture!
