GF Garlic Chicken Gnocchi Skillet

Prep Time: 10 Min     Cook Time: 20 Min    Total Time:  30 Min    Servings: 3-4 Servings

Ingredients:

  • 1lb of GF Gnocchi (I used Garofalo Gnocci from Bens Meats)
  • 1lb Boneless Skinless Chicken Breasts Cut into Bite Size Pieces (Got from Bens Meats)
  • 4-6 Cloves of Garlic
  • 1 Cup of Heavy Cream
  • 1 Cup of Chicken Broth
  • 1/2 Cup of Parmesan Cheese
  • 2 Tablespoons of Olive Oil
  • Seasoning to taste (I used Pepper, Salt and Italian seasoning)

 

 

Directions:

  1. Heat your large skillet with the oil in it before adding your chicken and seasoning.
  2. Once chicken is fully cooked remove the chicken from the pan.
  3. Add the garlic to your pan and let sautee for 30 seconds to bring out the flavor.
  4. Scrape the bottom of the pan to loosen all the browned bits from the bottom.
  5. Add the chicken broth to your pan now and let it get to temperature before adding the Gnocchi.
  6. Cook Gnocchi for 3 to 5 minutes stirring it occasionally until the Gnocchi is soft and tender.
  7. Now add your heavy cream and let simmer for another 3-4 minutes.
  8. Add the chicken back into the skillet and parmesan cheese and cook until cheese is melted and chicken is hot.
  9. Taste and adjust seasoning as needed and serve!

 

 

Notes:

  • Enjoy this meal with garlic toast or a side salad!
  • This meal serves about 4 people.

Storage:

  • Leftovers last 3 days in the fridge
  • This meal freezes well.
