Ingredients:
- 1lb of GF Gnocchi (I used Garofalo Gnocci from Bens Meats)
- 1lb Boneless Skinless Chicken Breasts Cut into Bite Size Pieces (Got from Bens Meats)
- 4-6 Cloves of Garlic
- 1 Cup of Heavy Cream
- 1 Cup of Chicken Broth
- 1/2 Cup of Parmesan Cheese
- 2 Tablespoons of Olive Oil
- Seasoning to taste (I used Pepper, Salt and Italian seasoning)
Directions:
- Heat your large skillet with the oil in it before adding your chicken and seasoning.
- Once chicken is fully cooked remove the chicken from the pan.
- Add the garlic to your pan and let sautee for 30 seconds to bring out the flavor.
- Scrape the bottom of the pan to loosen all the browned bits from the bottom.
- Add the chicken broth to your pan now and let it get to temperature before adding the Gnocchi.
- Cook Gnocchi for 3 to 5 minutes stirring it occasionally until the Gnocchi is soft and tender.
- Now add your heavy cream and let simmer for another 3-4 minutes.
- Add the chicken back into the skillet and parmesan cheese and cook until cheese is melted and chicken is hot.
- Taste and adjust seasoning as needed and serve!
Notes:
- Enjoy this meal with garlic toast or a side salad!
- This meal serves about 4 people.
Storage:
- Leftovers last 3 days in the fridge
- This meal freezes well.
