GF Crockpot Beef Stew

Ingredients:

  • 2Ibs Beef Stew Meat (I got this from Bens Meats. They even cut it up for me and everything!)
  • 1 Teaspoon of Salt
  • 1/2 Teaspoon of Black Pepper
  • 2 Tablespoons of GF Flour (I used Bobs Red Mills Cup 4 Cup from Bens Meats)
  • 2 Tablesppons of Olive Oil
  • 1/2 Diced Yellow Onion
  • 4 Garlic Cloves
  • 1 Large Carrot (Cut up)
  • 2 Potatoes (1 Inch Cubed)
  • 2 Cups of Beef Broth (I used Imagine Organic Brand from Bens Meats)
  • 1/4 Cup of Tomato Paste
  • 1 Tablespoon of Worchestershire Sauce (I used the Wizard brand from Bens Meats)
  • 1 Bay Leaf
  • 2 TEaspoon of Thyme Leaves

 

 

Directions:

  1. Season the beef in the salt, pepper and flour until it is fully coated.
  2. Now if your crockpot has a sautee function then you can do this next step in that or you can brown in a pan on the stove.
  3. Add your oil to your pot and let it heat up before adding you beef. Make sure to brown all sides evenly.
  4. Remove the beef from the pot and now add your onion, garlic and chopped carrot. Cook for about 2-3 min.
  5. Now add the beef back into the pot including the potatoes, beef broth, tomato paste, bay leaf, thyme leaves and worchesterchire sauce and stir well and scrape the bottom of the pot for the browned bits. (If your browning on stove top return the mixture to the crockpot)
  6. Cover crockpot and cook on high for 3-4 hours OR low for 6-7 hours.
  7. When all done mix everything together and serve!

 

 

Notes:

  • You can add more vegetables if you wish! (Chopped Celery, Peas…)

Storage:

  • Leftovers last 3-4 days in the fridge
  • This meal freezes well.
