GF Coconut Rice Crispy Cookies

Servings: 6 Dozen

Ingredients:

  • 1 Cup of Butter
  • 1 Cup of White Sugar
  • 1 Cup of Packed Brown Sugar
  • 2 Large Eggs
  • 1 Teaspoon Vanilla Extract
  • 1 1/2 Cups GF Flour (I used Bob Red Mills Cup4Cup)
  • 1 Teaspoon of Baking Soda
  • 1 Teaspoon of Baking Powder
  • 1 Pinch of Salt
  • 1 1/2 Cups of Quick Oats (I used Only Oats Brand)
  • 1 1/2 Cups Flaked Coconut
  • 2 Cups GF Rice Krispies (I used Natures Path Brand)

 

 

Directions:

  1. Preheat oven to 350 Degrees F.
  2. Mix together butter, white sugar, and brown sugar. Add in eggs and then vanilla. After you have mixed the ingredients add in flour, baking soda, baking powder and salt. Lastly stir in oatmeal, coconut and rice krispies.
  3. Put small spoonfuls on a prepared cookie sheet. About one inch round and bake for 10 – 12 minutes in the oven.
  4. Once the cookies have a slight golden color on the edges pull them out and cool them before serving.

 

 

Notes:

  • You can add walnuts, chocolate chips or any other of your favorite add ins.

Storage:

  • Leftovers last about 4-5 days after made.
  • This dessert freezes very well and can be made well in advance for christmas.
