GF Christmas Tree Cupcakes

Prep Time: 40 Min     Cook Time: 22 Min    Total Time:  1 Hour 2 Min    Temp: 350 Degrees F
Servings:   12 Cupcakes

Ingredients:

Cupcakes:

  • 1 Box Kinnikinnik GF Cupcake Mix
  • 4 Eggs
  • 3/4 Cup Water
  • 3/4 Cup Vegetable Oil

Icing:

  • Green Food Coloring
  • LillyBean GF Vanilla Bean Buttercream Mix
  • 10 Tablespoons Butter
  • 4 Tablespoons of Milk

 

 

Directions:

  1. Preheat oven to 350 Degrees F.
  2. Mix the ingredients for the cupcake mix in a stand mixter thoroughly and add in any mix ins that you want.
  3. Prep your cupcake pans by putting a cupcake liner in and ripping some tinfoil to make the tree shape.
  4. Pour batter into prepared liners and put the tinfoil between the pan and liner to make the tree shape. (See video below on how to do so). Dont pour the liners too full or you wont get a tree shape. Pour just over half full. Check the notes below if your trees dont have a tree shape when they are finished baking.
  5. Bake the cupcakes for 20 to 22 minutes until done.
  6. Now to make the icing in your stand mixer prepare icing as package says and add green food coloring to it.
  7. Put the icing into a piping bag or into a plastic bag made into a make shift piping bag. If your icing gets to warm while working with it and becomes runny put it in the fridge to harden a little bit making it easier to work with.
  8. Once brownies are out of the oven and completely cooled pipe the icing onto your trees. (See video below on how to do so).
  9. Decorate your cupcakes. I decorated mine with resses minis as the trunk of the tree and a star and round sprinkles for lights.

 

 

Notes:

  • If the shape is not exactly what you want turn the cupcakes upside down and trim your cupcakes so that they look more like a tree shape.
  • Can put the icing in the fridge to make the icing easier to work with if it becomes too warm and soft.
  • While brownies are cooking make your icing to save on time.

Storage:

  • Leftovers last about 4-5 days after made.
  • This dessert freezes very well and can be made well in advance for christmas.
